    Unicorn Poop Cookies

    When I made these cookies, I had every intention of calling them "rainbow cookies." Something cute for Saint Patrick's Day. When I showed them to my eleven year old, she said, "Mom, those are NOT rainbow cookies."

    I will admit that when she said that I took no offense to it. Having an eleven year old with hormonal mood swings more frequently than I care to share has definetely caused me recently to grow a thicker skin. But after half a day in the kitchen prepping meals, I'll admit, I was a little bitter. And I may have given her back a little attitude.

    "Really, than what ARE they?"

    Yes, that was my regression moment.

    "They are unicorn poop cookies. See? Look at Pinterest."

    I was then accosted to seeing some of the cutest little edible unicorn poops I've ever seen. I mean, people REALLY have gotten into the pooping unicorn thing. Cupcakes, cookies, salads, you name it, it's there. All cute, and rainbowey and poopey.

    Well, mine are NOT.

    I used natural dyes in our cookies, than went on a city wide hunt to try to find the matching natural sprinkles to go with it after remembering I had run out. Realizing that the only natural food store that carried the ones I wanted was two days away by super saver shipping I opted to cave in and go for the artificial.

    Because natural dyes tend to not be as flashy as the artificial dyes and gel colors, there is a little contrast on the pictures. Forgive me for my regression today.

    Unicorn Poop Cookies

    Ingredients

    • 1 cup unsalted butter, softened to room temperature
    • 1 cup sugar
    • 1 large egg
    • 1 teaspoon vanilla extract
    • 2 teaspoons baking powder
    • 3 cups unbleached all purpose flour
    • Rainbow non-pareil sprinkles
    • Natural food dyes

    Instructions

    1. Preheat oven to 350 degrees. In your mixing bowl, cream sugar and butter on medium speed for two minutes. Stop the mixer, scrape the bowl and mix on medium speed again for one more minute. Turn mixer to low speed and add the egg and vanilla. Mix just until egg is blended into butter mixture. Add the baking powder and flour, one cup at a time until flour becomes blended into mixture. The dough will become stiff by the third cup of flour.
    2. Turn off the mixer and divide the dough evenly into six bowls. Dye each with a different color of the rainbow--red orange, yellow, green, blue, purple. Evenly mix the dye into the dough.
    3. Roll each color of dough into a grape sized ball. Combine a ball of each color of dough, then roll into a larger ball. Roll the ball into a 12 inch rope. Starting from one end of the rope, roll the dough into a coil. Roll the edges of the cookie in sprinkles.
    4. Bake at 350 degrees for 9-11 minutes, or until done.

      When I first saw these I was like "ummm I hope whomever posted those knows they look like poop" and when I saw they were indeed "poop" cookies I started laughing. I haven't actually heard nor seen the rainbow poop foods. I have heard that unicorns fart rainbows and butterflies but that's it. LOL The ingredients sound good, but I am still having a hard time getting past the name and the look though, it's funny! Hehe

        I know, it's a kid thing. I tried a bite of one and just couldn't bring myself to eat anymore. The kids and their friends though have had a blast devouring them. Thanks for stopping by!
