    Vegetarian Black Bean Chili

    The Superbowl is upon us and all this week, everyday we are celebrating by making sure you have great new recipes. Seriously, in our house the Superbowl is as epic as Santa arriving down the chimney. We plan the menu for weeks and eat leftovers as long as the Superbowl commercial reruns play.

    This year, the first course for the Superbowl is chili. This vegetarian black bean chili comes from Melissa of Fried Ice and Donut Holes. As part of the Secret Recipe Club, I'm surprising Melissa this month by featuring one of her fabulous recipes.

    Vegetarian Black Bean Chili

    Ingredients

    • ⅛ cup olive oil
    • 2 cups chopped yellow onion
    • 2 red bell peppers, chopped
    • 6 cloves garlic, minced
    • 1-2 tbsp chili powder (use two for a spicier chili)
    • 2 teaspoons oregano
    • ½ teaspoon cayenne pepper
    • 1 ½ teaspoons cumin
    • 3 (15-ounce) cans black beans, rinsed and drained
    • 1 (16-ounce) can tomato sauce
    • ½ cup water
    • Shredded cheese, chopped cilantro, sour cream, tortilla strips for topping

    Instructions

    1. Heat the oil in a large dutch oven or pan over medium heat.
    2. To the pan, add the onions, peppers and garlic and cook until tender, approximately 8-10 minutes. Once tender, add the chili powder, oregano, cayenne and cumin, stirring to combine. Continue cooking for approximately two minutes more.
    3. Add the black beans, sauce and water, stirring to combine. Bring the entire mixture to a boil. Once the mixture comes to a boil, turn the heat to medium low and allow the mixture to continue cooking for approximately fifteen minutes.
    4. Turn heat off, remove chili from heat and ladle into bowls for serving. Top with shredded cheese, chopped cilantro, sour cream and tortilla strips if desired.

      I love how hearty chili is... you don't even need meat to make it a great, satisfying meal! Sounds delicious! Great SRC pick!

      I've never had a meat-less chili, but would not mind trying your version at all! Seems decadent and very flavorful... perfect to watch the big game, or a nice movie, why not? 😉
