    Weekly Meal Plan

    Another week is starting and I will admit, it is really, really hard to eat healthy when the kids and I are rushing off to school and the babysitters. After school hits and I'm juggling my own work schedule with soccer, football and Taekwondo. Doing a weekly meal plan helps me stay grounded and sane. weekly meal plan

    My biggest hurdle in creating my weekly meal plan is that the desire is there to create and eat healthy meals but I'll admit that stopping by the grocery or pizza store on the way home for a quick and easy pre made meal gets tempting. Crockpot and simple and easy meal prep are a must to avoid that temptation. This week's meal plan utilizes simple and easy meals from my own collection along with some foods from Yahoo! Food. Yahoo! Food has teamed up with some amazing publishers like Bon Appetit, Epicurious and Martha Stewart. You can also get the latest articles and food trends on the site too. Yahoo! Food has been gracious enough to allow me to pull a few meals to use today from their huge collection of recipes. You'll notice I've included mostly dinners since that is my biggest "problem child" meal and the one I am most likely to stray from due to busy schedules.

    Grilled Chicken Sausages with Kale and Pecorino (sub a less expensive cheese like parmesan or asiago if needed)

    Thursday

    Friday

    Balsamic Flank Steak  (GF)

    Mango and Melon Balls for Dessert

    Saturday

    Homemade Spaghettio's For the Kids (+GF Version)

    Grilled Marinated Chicken Thighs (+GF Version)

    Grilled Cobbler

    I've been making over recipes since I was ten. Back then I wasn't so great at it and created everything from rubber cakes for my Dad's birthday to rock muffins that put a hole in the wall.

    Diagnosed with colitis ten years ago and with three young children I had to learn to cook. But life was busy and there wasn't a lot of time to cook or figure out what I could eat!
