    White Bean Dip with Parmesan Crisps

    I have beans. Lot's and lot's and lot's of beans. With my in laws moving we have inherited a large portion of their food storage that they don't want to take along with them now that they don't have kids living at home. We inherited beans, wheat, and popcorn. And a lot of other stuff that I have no idea what to do with. But since a lot of the food given to us need to be used now, it was time to look for some great recipes to use up all of those beans.

    It was too hot for soup which I usually use beans in, so it was time to come up with something different. I needed a good white bean recipe, and I found it!

    This bean recipe comes from The Cozy Apron and tastes absolutely delicious. The bean dip tastes wonderful with the addition of garlic, lemon and bacon. It's a good for you dip that tastes great when placed a top a parmesan crisp.

    White Bean Dip with Parmesan Crisps

    Yield: 6 servings

    White Bean Dip with Parmesan Crisps

    A great tasting white bean dip recipe with bacon, lemon, and garlic placed on top a cheesy parmesan crisp.

    Ingredients

      For the Bean Dip:
    • 2 15oz cans (or 3 cups) of great white northern beans, drained and rinsed
    • 8 strips of bacon, cooked and chopped into tiny bite sized pieces
    • 1 clove of garlic, minced
    • ¼ cup chopped parsley
    • ½ tsp lemon zest
    • 2 ½ tsp lemon juice
    • ½ tsp salt
    • ¼ cup olive oil
    • ¼ cup water
    • For the Parmesan Crisps:
    • 1 french baguette, cut into ½ inch slices
    • 1 clove of garlic, minced
    • ¼ cup parmesan cheese
    • 1 tsp Italian seasoning
    • Butter or olive oil, for brushing

    Instructions

      To Prepare the Bean Dip:
    1. In a food processor place the beans, bacon, garlic, parsley, lemon zest, lemon juice and salt. Turn on the food processor and as the mixture blends, drizzle the water and oil into the mixture. Keep processing until smooth. Turn off the food processor and transfer the mixture to a saucepan. Heat on medium low, stirring occasionally while you prepare the parmesan crisps.
    2. To Prepare the Crisps:
    3. Preheat oven to broil. Arrange each slice of bread on a baking sheet. On each slice of bread, brush a light layer of butter or oil over the top. Evenly divide the parmesan cheese and garlic among the slices of bread. Place the baking sheet in the oven for several minutes, or until bread is lightly browned. Watch the bread closely as it can burn quickly! Remove the crisps from the oven and place on a plate. Transfer the dip to a bowl, or divide among six small bowls. To eat, top each parmesan crisp with a generous layer of bean dip.

      Love thi..I use 1/2 the bacon due to cholesterol issues. I alo add 2haandfuls of fresh bby spinach Or Kale...Some nights this is dinner
