Sunday mornings we always serve a nicer breakfast (well, nicer than a bowl of cereal). My Dad used to wake up early Sunday morning and make us a wonderful hot breakfast when we were kids. The smell would drag a tired teenage bum out of bed.
I make a loaf of bread. I hope that counts.
Today I'm making white whole wheat flour banana bread. I love using white whole wheat flour. It's very easy to substitute in recipes and can easily be found at major retailers. This recipe turns out the perfect loaf everytime.
White Whole Wheat Flour Banana Bread
Ingredients
- 3 very ripe bananas, peeled and mashed
- ⅓ cup melted butter, nonfat plain greek yogurt, or coconut oil
- ¾ cup sugar (substitutes okay)
- 1 egg, beaten
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- Pinch of salt
- 1 ½ cups white whole wheat flour
- 1 tsp cinnamon
Instructions
- Lightly grease a 9x5 inch bread pan. Set aside. Preheat oven to 350 degrees.
- In a bowl, mix together the bananas and melted butter, greek yogurt or coconut oil. Add the sugar, egg and vanilla and continuing stirring until combined. Add in the baking soda, salt, flour and cinnamon and continue to stir until batter is smooth.
- Pour the batter into the bread pan. Bake at 350 degrees for 50-60 minutes or until a toothpick inserted into the center of the loaf comes out clean. Remove from oven and allow the bread to cool in the pan for 10 minutes before removing the bread from the pan and placing on a wire rack to finish cooling completely.
