To Make The Pastry: (Recipe Makes Equivalent of 1 Sheet of Puff Pastry)
In a food processor, pulse or mix together the flour and butter until crumbly. (Dough crumbles should be about the size of peas).
Make a hole in the center of the dough and pour in the ice cold water. Stir with fork to combine the water and dough.
Lightly flour a cutting board or kitchen counter with flour. Lightly flour your rolling pin, then roll the dough into a 12x18 inch rectangle. (30x45 cm)
Fold the dough in half, then half again, then roll out into the 12x18 inch rectangle. Do this 6-7 times.
Wrap the dough in plastic wrap and refrigerate dough for a couple of days or freeze for later use. Dough will freeze up to one month. Substitute in any recipe for one puff pastry sheet.
To Make The Strawberries and Cream Pastries:
Preheat oven to 400 degrees. Line a cookie sheet with parchment paper. Cut your puff pastry into 6 rectangles. Move the cut pastry over to the cookie sheet, leaving a couple of inches of space between each pastry. With a fork, prick the center of each pastry, leaving about ½ inch space from all the edges.
In a bowl, mix together the strawberry jam and softened cream cheese. Divide the mixture evenly between the pastries. Spread the mixture evenly over the center of each of the pastries, leaving about ½ inch space from the edges of the pastry. Top with sliced strawberries.
Lightly brush the edges of the pastries with the melted butter. If you don't have a brush, you can dip a paper towel into the melted butter then brush along the edges of each pastry.
Bake the pastries at 400 degrees for 13-17 minutes, or until the pastries are puffed and golden. Remove from the oven and serve.
