Gluten Free Winter BBQ Grilled Chicken and Vegetables

Just because it's winter that shouldn't stop you from firing up the grill! Today we've got a delicious winter BBQ grilled chicken and vegetables recipe made with a savory bbq spice rub. We then grilled some winter vegetables and added some pomegranate and feta on top to finish off the meal.
Preheat grill to desired heat. (We do medium-low to medium). Rub chicken with the spice rub. Place chicken on grill and cook for several minutes on one side. Flip chicken and cook on the other side until chicken is no longer pink in the center and reaches an internal temperature of 165 degrees.
While the chicken is cooking, cook the vegetables in a grill pan or straight on the grill. Cook until vegetables are tender, then remove. Brush vegetables with oil prior to grilling.
Once chicken and vegetables are cooked, place them on a plate then sprinkle pomegranate arils and feta cheese on top.
