½cupprotein powder (chocolate, vanilla, or unflavored)
¼ cupgranulated sweetener (sugar or calorie free sugar)
2tablespoonbaking powder
Instructions
Place ingredients in a mason jar or airtight container. Stir to mix. Mix stores for one to two months. See notes for preparation for batter.

Cooking Instructions
Mix 1 ½ cup mix with 1 cup water, milk or non dairy milk until smooth. Depending on the gluten free flour and protein you use you may need to add some more water or milk a tablespoon at a time to reach the desired consistency you need.
Baking:
You can use the pancake batter to make gluten free oven baked pancakes or stovetop or griddle pancakes. The batter adapts easily!Likewise, you can use this batter for other recipes calling for pancake mix.
Variations:
Chocolate: Use chocolate protein powder or add 1-2 tablespoons of cocoa powder to the mix.
Banana Bread: When making up your pancakes, add ½ cup mashed bananas and ½ teaspoon of cinnamon.
Vanilla: Simply add 1 teaspoon of vanilla to the batter.
Berry: Add ½ cup fresh or thawed blueberries, strawberries, blackberries or mixed berries to the batter.
Pina Colada: Add ¼ cup shredded coconut and ¼ cup crushed pineapple to the batter.
Peanut butter: Add 1-2 tablespoon peanut butter powder to the mix or add 1-2 tablespoon of peanut butter to your batter.
Pumpkin: Add ¼ cup pumpkin puree and ½ teaspoon cinnamon or pumpkin pie spice to your batter.
Apple Cinnamon: Add ½ teaspoon and ½ cup petite diced apples to your batter.
