The perfect pesto pasta salad you can enjoy year round with only four ingredients! Penne pasta, tomatoes, mozzarella and pesto come together in one simple recipe! (Gluten free option, nut free option, soy free, vegetarian, FODMAP)
2cupspenne pasta, uncookedcan use gluten free pasta
1cupsundried or petite diced tomatoes
1cupmozzarella cheese pearls
1cup pesto sauce
Instructions
Cook pasta according to package directions. Drain, then toss with pesto, mozzarella cheese and tomatoes. Stir until combined. Serve immediately or cold.

Make it a Meal
Just add some chicken, fish, steak or plant based meat to make this a meal!
Storing
After making up the salad, it can be stored in an airtight container for several days.
Drying Out
If your pasta salad seems to dry out a little bit after storing, (this is usually due to the noodles absorbing the pesto oils) then just add a little more pesto and stir it into the pasta.
