2 ½ poundsboneless skinless chicken breasts or thighs
4cupschicken brothdivided
214 ozpackages smoked (polish) sausagesliced
1 wholeyellow onionfinely chopped
3cupsuncooked rice
salt and pepper optional
Instructions
Place the rice in the rice cooker and prepare according to package directions. Meanwhile, on the stove it's time to make your tasty southern cuisine! Place your chicken in a saucepan then cover in two cups of broth. Heat on medium high heat and cook until chicken reaches 165 degrees. Remove the chicken and allow it to cool. Add the sausage, and onion and one cup broth to the pan. Heat on medium low for 10-15 minutes. Shred the chicken and add to the saucepan the last five minutes of cooking time.
Place the rice in a bowl and top with chicken mixture. Sprinkle with salt and pepper for additional flavor if desired.
