Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 8x8 inch baking pan
In a medium bowl, whisk together the flour, sugar, cocoa powder, and salt.
In a small bowl, whisk together the butter, milk, and peppermint extract.
Add the wet ingredients to the dry ingredients and stir until just combined.
Pour the batter into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
Let the brownies cool completely before cutting into squares and serving.
Notes
For the Frosting: In a mixing bowl, beat together 3 cups powered sugar, ⅓ cup butter softened, 2 tablespoons milk, ½ teaspoon mint extract and several drops of food coloring (if desired). Beat until frosting is able to be spread on brownies. Frost with desired amount of frosting. You can half this recipe if you just want a thin layer of frosting on your brownies.
