Five Ingredient Beef Stew

Looking for a quick last minute recipe for the Superbowl? Our five ingredient beef stew is full hearty ingredients like potatoes, beef and vegetables! This beef stew can be on the table in thirty minutes or you can make a slow cooker version too! (GF, DF, Nut Free, Soy Free, Egg Free, Paleo)

  • 1 ½ lb beef stew meat
  • 3-4 whole russet potatoes chopped into bite sized pieces
  • 2 ½-4 cups beef broth
  • ½ cup diced yellow onion
  • 1 cup bite sized frozen vegetables carrots, peas, celery


  • STOVETOP: On medium high heat in a pot, brown the meat. (Approximately five minutes) Set the meat aside and in the pan place the vegetables, onion and potato. Cook for several minutes until vegetables are tender. Add the meat and beef broth to the pot. Bring to a boil over medium heat, then reduce heat to a simmer. Allow stew to cook for approximately 20-30 minutes or until potatoes are tender. Season with salt and pepper if desired.
  • SLOW COOKER: Place all ingredients in a slow cooker. Season with salt and pepper if desired. Cook on high for 4-5 hours or low for 6-8 hours.


Beef Broth Amount

I like a hearty stew and tend to use less beef broth. I realize some like more of a soup like stew. I adjusted the amounts of the beef broth to allow freedom in how thick you want your beef stew. 


Beef stew really seems to taste better as the flavors have more time to come together. Often stew tastes better the next night! You can store beef stew in an airtight container for several days. Reheat in the microwave or on the stovetop as desired.
