STOVETOP: On medium high heat in a pot, brown the meat. (Approximately five minutes) Set the meat aside and in the pan place the vegetables, onion and potato. Cook for several minutes until vegetables are tender. Add the meat and beef broth to the pot. Bring to a boil over medium heat, then reduce heat to a simmer. Allow stew to cook for approximately 20-30 minutes or until potatoes are tender. Season with salt and pepper if desired.
SLOW COOKER: Place all ingredients in a slow cooker. Season with salt and pepper if desired. Cook on high for 4-5 hours or low for 6-8 hours.
