Copycat Pioneer Woman Two Ingredient Gluten Free Strawberry Tarts

Ree Drummond, author of the website The Pioneer Woman became famous with her hometown cooking and country drawl. (Sorry folks, all I’ve got is (former) California blonde and I saw a lot of the word ‘like.’ Does that count?) With her country lifestyle she’s been able to bring country meals home. This easy sweet treat is perfect for a morning breakfast, sweet little treat or party appetizer. (Gluten free option, dairy free, egg free, nut free, soy free, vegan, vegetarian, FODMAP)
Preheat the oven to 350 degrees. Lightly grease a mini muffin pan. Roll the pie crust ¼ inch thick if needed. Cut dough into 2x2 inch squares and place in the mini muffin cups. Place 1 teaspoon of strawberry jam into each mini muffin cup. Bake at 350 degrees for approximately 10-13 minutes, or until crust is golden brown.
