Five Ingredient Gluten Free Chicken Salad Sandwich

When you have just a few minutes to throw lunch or dinner together, try this five ingredient gluten free chicken salad sandwich! Enjoy diced chicken, celery, mayonaise and herbs piled high on a gluten free bun! (gluten free, dairy free, nut free, soy free, egg free option, FODMAP)
combine all ingredients in a bowl until thoroughly mixed.
Serve on toast, crackers, or as a sandwich.

Serving
If you are using gluten free bread, I've traditionally seen chicken salad sandwiches served on a croissant. That's a wee bit harder to do if you can't have gluten. Here are a couple of other bread ideas:
Serve open faced on a toasted piece of bread

Cut the chicken and celery then place it in a bowl with the remaining ingredients. Stir it together and your meal is ready!
Storing
Because this meal has mayonaise, it probably won't store for very long. You will want to keep it in an airtight container and eat it within a few days.
