Growing up, one of my favorite things to do was to look out the stained glass windows at church. These cookies remind me of those days. They are a fun project to make (and eat!) The cookies are biscuit like in taste with circles of sweet stained glass candy inside.
Unwrap the lollipops and put the red in one bag and the green in another. Seal then crush the lollipops with a meat mallet or rolling pin. Set the bags aside. In a mixer, cream together the butter and sugar for several minutes on medium speed until light and fluffy. Turn mixer to low and stir in the egg and flour. Mix just until combined. Remove dough from mixer and place in plastic wrap. Chill in the freezer for 15 minutes. After 15 minutes, remove ⅓ of the dough from the freezer and move the rest of the dough to the refrigerator to continue chilling. Roll the dough out on a lightly floured surface to ¼ inch thick.
Preheat your oven to 350 degrees. Once your dough is rolled out, use the tree template to cut our your trees in varying sizes. Cut out circles of varying shapes inside the trees. Reuse leftover dough to roll out again. Bake at 350 degrees for 7-8 minutes, then open the oven and use a spoon to spoon the crushed lollipops into the cut out circles. Bake for 2-3 minutes more or until the lollipops are melted and the cookies are golden. Remove from oven, and allow the cookies to cool completely before removing. Continue rolling dough and making cookies until completed. Discard any unused dough.

SUBSTITUTIONS:*You can substitute unbleached all purpose flour for the gluten free flour. Make sure your gluten free flour has xantham gum in it! * You can substitute dairy free butter for butter. STORING:You can store cookies in an airtight container for up to one week.
