    Gluten Free Stained Glass Cookies

    Gorgeous gluten free stained glass cookies that are fun to make and decorate! A biscuit like cookie with bits of colored candy throughout. (Gluten free, dairy free option, soy free, nut free, vegetarian)

    Stained Glass Cookies

    Growing up, one of my favorite things to do was to look out the stained glass windows at church. These cookies remind me of those days. They are a fun project to make (and eat!) The cookies are biscuit like in taste with circles of sweet stained glass candy inside.

    Ingredients

    A few simple ingredients are all you need to make these cookies!

    • Butter
    • Caster Sugar
    • Egg
    • Gluten Free Flour
    • Green and Red Lollipops

    Equipment

    There will be a few items that you'll need to use for this recipe:

    • Rolling Pin
    • Circular Cut Outs in Varied Sizes (I just used those old college shot glasses that don't have much use anymore!)
    • Tree Templates
    • Plastic Storage Bags

    Making The Cookies

    Unwrap the lollipops and put the red in one bag and the green in another. Seal then crush the lollipops with a meat mallet or rolling pin. Set the bags aside.

    In a mixer, cream together the butter and sugar for several minutes on medium speed until light and fluffy. Turn mixer to low and stir in the egg and flour. Mix just until combined.

    Remove dough from mixer and place in plastic wrap. Chill in the freezer for 15 minutes. After 15 minutes, remove ⅓ of the dough from the freezer and move the rest of the dough to the refrigerator to continue chilling. Roll the dough out on a lightly floured surface to ¼ inch thick.

    Tips for Rolling Out Gluten Free Dough

    **Note: Gluten free dough doesn't always like to be rolled out on a traditional floured surface. You can roll it out between two sheets of parchment paper or two sheets of lightly sprayed plastic wrap if it isn't rolling the traditional way. I used the parchment paper method for these cookies as I could take off the top part of the parchment paper and just slide the cookies onto the cookie sheet.

    Preheat your oven to 350 degrees. Once your dough is rolled out, use the tree template to cut our your trees in varying sizes. Cut out circles of varying shapes inside the trees. Reuse leftover dough to roll out again. Bake at 350 degrees for 7-8 minutes, then open the oven and use a spoon to spoon the crushed lollipops into the cut out circles. Bake for 2-3 minutes more or until the lollipops are melted and the cookies are golden.

    Remove from oven, and allow the cookies to cool completely before removing.

    Continue rolling dough and making cookies until completed. Discard any unused dough.

    Can You Frost the Cookies?

    Absolutely! You can make some frosting and decorate the trees. Depending on the look you want, you can use:

    • Buttercream frosting
    • white chocolate buttercream frosting
    • royal icing

    Just wait until the cookies are completely cooled before frosting.

    Storing

    You can store cookies in an airtight container for up to one week.

    Notes

    SUBSTITUTIONS:
    *You can substitute unbleached all purpose flour for the gluten free flour. Make sure your gluten free flour has xantham gum in it! 
    * You can substitute dairy free butter for butter. 
    STORING:
    You can store cookies in an airtight container for up to one week.
