    Pour your pistachio cake dough into your bundt pan. Garnish with additional pistachios if desired.

    Bake, then remove cake from oven and allow to cool for several minutes before removing from pan and allowing to cool. Cool completely before frosting.

    Preheat your oven to 350 degrees Fahrenheit. Grease and flour a 10-inch fluted bundt pan to prevent sticking.

    In a large bowl, combine the cake mix, instant pudding powder, eggs, soda and oil. Use an electric mixer or whisk mixing on high for several minutes until the mixture is well combined and smooth. Gently fold in the pistachios.

    Pour the batter into the prepared pan. Spread evenly.

    Bake for approximately 40 minutes or until a toothpick inserted into the center comes out clean. Once baked, remove the cake from the oven and allow it to cool for 10 minutes. Use a dull knife to loosen the edges, then carefully transfer the cake to a wire rack or plate to cool completely.

    Once cooled, dust the cake with powdered sugar or frost.

    There are several substitutions you can make for your pistachio pudding cake recipe to accommodate any food allergies, intolerances or preferences.

    • Gluten free pistachio cake: To make this recipe gluten free use gluten free white cake mix or yellow cake mix.
    • Dairy free cake: Currently there are no dairy free pistachio puddings available on the market. You can substitute dairy free vanilla pudding for now. A close second is one box of dairy free vanilla pudding with one tablespoon pistachio butter. You will also want to substitute dairy free butter.
    • Vegan: Use a vegan cake mix, vegan pistachio pudding and plant based butter. You will also want to use egg replacer for the eggs.

    There are a few variations of this recipe. You can use water in place of the soda, but the soda does make for a nice fluffy cake like this soda pop cake recipe.

    Also to note, this cake will vary in color. If you're looking for your cake to have a nice green hue, use a white cake mix with the green pistachio pudding. Using a yellow cake mix will yield a less green looking cake.

    You will want to have a bundt pan for this recipe. I go traditional and use a metal bundt pan but have friends that rave about using a silicone bundt cake pan.

    Store your cake in an airtight container in the refrigerator for several days. You can also freeze the cake for up to one month.

    Ingredients
      

    • 1 15.25 ounce box white or yellow cake mix
    • 1 3.4 ounce box pistachio instant pudding (just the powder)
    • 4 large eggs
    • 1 cup lemon lime soda
    • ½ cup oil
    • ½ cup finely chopped pistachios optional

    Instructions
     

    • Heat your oven to 350°F (175°C).
    • Take a 10 or 12-inch fluted bundt pan, and coat it generously grease it. Then, dust the inside with flour to ensure the cake comes out easily.
    • Grab a large bowl and whisk together your cake mix, instant pudding mix, eggs, soda, and oil. Use an electric mixer on high or whisk vigorously for 2 minutes until everything's perfectly combined.
    • Now, gently fold in those delicious pistachios so they're evenly distributed throughout the batter.
    • Carefully pour the batter into your prepared bundt pan, making sure it's evenly distributed.
    • Pop the pan into the preheated oven and bake for about 40 minutes. Keep an eye on it! To test if it's done, insert a toothpick in the center. If it comes out clean, you're good!
    • Once it's baked, take it out of the oven and let it cool for 10 minutes. Then, use a dull knife to gently run along the edges of the pan, loosening the cake. Let it cool completely.
    • Flip the cake upside down onto a wire rack or plate. Dust it with powdered sugar for an extra touch.
    • Slice then serve.
