½cup flourcan use all purpose flour, gluten free flour or grain free flour
½cupnut butter or puree (pumpkin, zucchini, banana)
1cupsweetened condensed milkcan substitute dairy free sweetened condensed milk or maple syrup or honey
Optional add ins: chocolate chips, cinnamon, nuts, fruit
Instructions
Preheat oven to 350 degrees. Lightly grease 12 muffin cups then set aside.
In a large bowl, whisk together the protein powder, baking powder, flour, nut butter or puree and sweetener until just combined.
Divide the batter evenly among the prepared muffin cups.
Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Let cool in the muffin tin for a few minutes before removing to a wire rack to cool completely.
