    Health Benefits

    1. High in protein: As mentioned, protein muffins are a great way to increase your protein intake. Most protein muffin recipes contain around 10-15 grams of protein per muffin, depending on the type of protein powder used.
    2. Convenient: Protein muffins are incredibly convenient and easy to make. They can be prepared ahead of time and stored in the fridge or freezer for a quick and easy breakfast or snack.
    3. Customizable: Protein muffins are highly customizable. You can use different types of protein powder, add-ins, and even swap out the bananas for other fruits or vegetables.
    4. Great for on-the-go: Protein muffins are the perfect on-the-go breakfast or snack. Simply grab one and head out the door!

    Tips for Making Perfect Muffins

    1. Choose the right protein powder: There are many different types of protein powder available, including whey, casein, pea, and soy. Choose the one that works best for your dietary needs and preferences.
    2. Don't overmix the batter: Overmixing the batter can result in tough, rubbery muffins. Mix the ingredients until just combined.
    3. Add-ins: Feel free to get creative with your add-ins. Try adding chopped nuts, dried fruit, or shredded coconut for added flavor and texture.

    Banana Muffins

    • 2 ripe bananas
    • 4 eggs
    • ½ cup protein powder (whey, casein, pea, or soy)
    • 1 teaspoon baking powder
    • Optional add-ins: chocolate chips, nuts, cinnamon, vanilla extract, etc.

    Instructions

    1. Preheat the oven to 350°F.
    2. Mash the bananas in a mixing bowl until smooth.
    3. Add the eggs to the bowl and whisk until well combined.
    4. Stir in the protein powder and baking powder until the batter is smooth and free of lumps.
    5. Fold in any optional add-ins, such as chocolate chips or nuts.
    6. Grease a muffin tin or line with paper muffin cups.
    7. Pour the batter evenly into each muffin cup.
    8. Bake for 20-25 minutes, or until the muffins are lightly golden brown and a toothpick inserted into the center comes out clean.
    9. Remove from the oven and allow the muffins to cool for a few minutes before serving.

    Nut Butter Muffins

    • 2 scoops vanilla protein powder
    • ½ cup flour (can use almond, gluten free, or all purpose)
    • ½ cup peanut butter or other nut butter
    • 1 cup unsweetened applesauce
    • ½ cup chocolate chips (optional)

    Instructions

    1. Preheat oven to 350 degrees F (175 degrees C).
    2. Grease a 12-cup muffin tin or line with paper liners.
    3. In a large bowl, whisk together the protein powder, almond flour, peanut butter, applesauce, and chocolate chips (if using).
    4. Divide the batter evenly among the prepared muffin cups.
    5. Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
    6. Let cool in the muffin tin for a few minutes before removing to a wire rack to cool completely.

    Pudding Muffins

Yes, pudding! You can substitute dairy free pudding mix to make these gluten free protein muffins with pudding! A lot of protein muffins can be really dense. Adding some pudding helps to create a light and airy muffin!

    Change it Up!

you can also change it up a little bit by making some protein powder pancakes. Or go big and make some delicious hot cocoa protein powder pancakes!

Living with alpha-gal syndrome makes me feel like I am constantly searching for new ways to get enough protein in my daily diet. I love that the 2 scoops of plant-based protein powder do the trick here without the muffins tasting like they have protein powder baked in. Win/win!

These were so easy - I had everything on hand, too. Made them with chocolate chips this time for a little sweetness, but I'm excited to try different mix ins next week! I'm thinking diced apples & cinnamon with my go-to vanilla whey powder.
