These delicious steak tacos with lime mayo dressing are made with a soft corn tortilla filled with grilled steak, sliced onions, chopped cilantro, bell peppers and a drizzle of lime mayo dressing.
On a baking sheet or broiler pan, arrange the bell peppers in a single layer. Place the bell peppers under the broiler and broil up to four minutes, until lightly blackened. Remove from oven, allow the peppers to cool and cut into thin strips. Set aside for later use.
In a small bowl, mix together the pepper, paprika and salt. Rub the spice mixture on both sides of the steak. Place the steak on the broiler pan or baking sheet and place under the broiler. Broil for five minutes on each side, or until done. Remove from oven, allow meat to cool slightly before cutting into strips across the grain.
In a small bowl, combine the mayonaise, lime zest, lime juice, garlic and water. Mix until well combined.
Place one tortilla at a time in a frying pan or directly on a grill. Heat for fifteen seconds each side, or until lightly charred. Evenly divide the steak and bell peppers among the eight tortillas. Top with one tablespoon of salsa, one tablespoon of cheese and 1 teaspoon of lime mayo mixture.

Serve fresh. Leftovers can be stored in an airtight container in the refrigerator for up to two days.
