½poundchipped beef or organic thinly sliced beef or ham
½cup1 stick butter
1cupunbleached all purpose flour
3 ½cupsmilk
8slicesof toast
Instructions
Cut your beef or ham into small bite sized pieces. Set aside.
In a medium saucepan set on medium heat, place the butter and milk. Whisk until butter is melted. Slowly whisk in the flour, stirring until well blended. Stir in the meat and allow mixture to come to a boil. Continue stirring until mixture thickens.
Remove mixture from heat and evenly pour the mixture over each slice of toast. Salt and pepper to taste if desired.
Notes
store leftover meat in airtight container for several days. reheat.
