Dig your spoon into some beautiful air fryer sweet potatoes topped with Greek yogurt. A handful of spices adds a tangy and sweet taste to the potatoes!
Preheat the air fryer to 400°F (200°C). Pierce the sweet potato several times with a fork to allow steam to escape while cooking. Rub the sweet potato with olive oil, paprika, dry basil, salt and pepper, ensuring it is evenly coated.
Place the seasoned sweet potato in the air fryer basket. Cook the sweet potato in the air fryer for 30-40 minutes, or until it is tender and the skin is crispy.
Once the sweet potato is cooked, carefully remove it from the air fryer and let it cool for a few minutes. Cut the sweet potato in half lengthwise, creating two sweet potato jackets or boats.
Serve the sweet potato jackets with a dollop of the Greek yogurt topping on top. Garnish with additional spices if desired.
Notes
For a dairy free vegan recipe substitute the Greek yogurt for dairy free yogurt. Sweet potatoes can be made ahead and reheated but are best served fresh from the air fryer.
