Air fryer roasted sweet potatoes are a creative and nutritious way to enjoy sweet potatoes. We cut the halved sweet potatoes into sweet potato boats. When halved, they can also be referred to as sweet potato jackets. When paired with Greek yogurt, these boats become a perfect balance of sweet and tangy!
This recipe is perfect anytime of year. These potatoes were inspired by my twice baked potatoes on this site, and pairs well with some chicken tenders.

Instructions
Let's get started making your air fryer roasted sweet potatoes. In just a few simple steps, you'll have an amazing tasting meal!
Combine all spices and mix thoroughly.
Lightly oil the outside of the sweet potato, then toss in the spices.
Cook your sweet potatoes in the air fryer. Halve the cooked sweet potato then fill with yogurt and additional toppings if desired.
Serve and enjoy your sweet potatoes!
Preheat your air fryer or oven to 400°F (200°C). Pierce the sweet potato several times with a fork to facilitate steam release during cooking. Rub the sweet potato thoroughly with olive oil, paprika, dry basil, salt, and pepper, ensuring an even coating.
Place the seasoned sweet potato in the air fryer basket or on a baking sheet for oven cooking. If using the air fryer, cook the sweet potato for 30-40 minutes. In the oven, bake for approximately 45-55 minutes, or until it is tender and the skin is crispy.
Once the sweet potato is cooked, carefully remove it from the air fryer or oven and allow it to cool for a few minutes. Cut the sweet potato in half lengthwise, creating two "jackets" or "boats."
