Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
In a small saucepan, combine the olive oil, honey, orange juice, and star anise. Heat the mixture until warm, then set it aside for several minutes to allow the star anise to infuse its flavor into the mixture.
Arrange the apricots in a baking dish with the cut side facing up.
Remove the star anise from the olive oil mixture, then pour the infused mixture over the apricots, ensuring they are well coated.
Roast the apricots in the preheated oven for approximately 20 minutes, or until they are cooked through and beginning to bubble.
