Watermelon Jicama Salsa and Brie Summer Bruschetta

This effortlessly beautiful summer salsa and brie bruschetta is made with fresh watermelon jicama salsa from Sam's Salsa, brie and toasted bruschetta. (GF, DF, EF, SF, NF, V, VEGAN)

  • 1 whole baguette can substitute gluten free
  • 4 tbsp brie, cream or mascarpone cheese can substitute dairy free
  • 4 tbsp summer salsa--watermelon jicama, strawberry, mango, etc.


  • Heat broiler. Slice baguette lengthwise and into individual slices. Toast bread under broiler until browned. Remove from oven and allow bread to cool.
  • Spread bread with cheese, then top with a tablespoon of salsa. Serve immediately.

The bruschetta in this recipe is the star of the show. It can be served as a side dish and paired with a chicken breast or steak that doesn't contain a lot of spices. Or it can be served stand alone with a drink as a summer party appetizer.

This recipe just screams a nice ice cold glass of fresh squeezed lemonade. Maybe a nice salt rimmed margarita or a glass of horchata?
Party Serving Suggestions:
At a party, you could leave out the toasted bruschetta and place out various cheeses for guests to spread themselves and several fruity salsas to choose from as a topping. It would be a fun buffet party recipe.
