Mexican sno cones are topped with a rich natural mango syrup and a hint of spice for a unique twist on the classic sno cone. It only takes a few minutes to create a beautiful and delicious natural mango snow cone! (Gluten free, dairy free, soy free, nut free, egg free, vegan, vegetarian)
3wholemangoes, ripe, peeled and dicedcan use approximately 3 cups frozen mango
2 ½cupswater
2 ½cupsgranulated sugar
cinnamon or tajin for sprinkling
Instructions
In a saucepan over medium low heat, combine the mangos, water, sugar and cinnamon. Keep temperature at medium low heat until sugar is dissolved, then turn heat up to medium high and bring mixture to a boil. Once mixture is boiling, turn down heat to low and allow to simmer for 10-15 minutes, or until mango is cooked and syrup thickens.
Remove mixture from heat and allow to cool completely. To speed cooling, you can place mixture in refrigerator or freezer for several minutes.
To serve, spoon cooled mixture over shaved ice. Sprinkle with tajin if desired.
