sprinkle your chicken breasts with salt and pepper. Heat your skillet and oil on medium heat. Cook chicken breasts for 2-3 minutes on each side, or just until golden brown.
While the chicken is cooking, preheat your oven to 475 degrees. Transfer the chicken to a lightly greased baking dish. Add the tomatoes, olives and capers. Bake at 475 degrees for 10-15 minutes, or until chicken reaches an internal temperature of 165 degrees.
Remove from oven and serve

FODMAP Friendly
Tomatoes are not FODMAP friendly usually and for some tomatoes can really play a number on your stomach! You can substitute sundried tomatoes or use canned roma tomatoes if those are more stomach friendly.
