    A delicious mediterranean chicken breast recipe with tomatoes, olives and capers. The Mediterranean diet is one of the healthiest lifestyle diets and this recipe is packed with lot's of goodness!

    Ingredients

    I'm keeping the ingredient list low on this one with just five ingredients including:

    • Boneless chicken breasts
    • Olive oil
    • Grape tomatoes
    • Olives
    • Capers

    FODMAP Friendly

    Tomatoes are not FODMAP friendly usually and for some tomatoes can really play a number on your stomach! You can substitute sundried tomatoes or use canned roma tomatoes if those are more stomach friendly.

    Making

    Now it's time to make our chicken!

    First sprinkle your chicken breasts with salt and pepper. Heat your skillet and oil on medium heat. Cook chicken breasts for 2-3 minutes on each side, or just until golden brown.

    While the chicken is cooking, preheat your oven to 475 degrees. Transfer the chicken to a lightly greased baking dish. Add the tomatoes, olives and capers. Bake at 475 degrees for 10-15 minutes, or until chicken reaches an internal temperature of 165 degrees.

    Remove from oven and serve.

    Storing

    This recipe is best served fresh. But you can save leftovers in an airtight container in the refrigerator for several days. Microwave to reheat.

    Ingredients

      This is one of my favorite quick and easy chicken recipes. I made it for a family dinner and replaced chicken with halloumi cheese for my vegetarian daughter. Very tasty.
