4cupspeeled and sliced peaches(can use fresh, frozen or canned peaches)
1teaspooncinnamon
Instructions
Preheat your oven to 375°F (190°C) and grease a 9x9-inch (22x22 cm) baking dish. Set aside.
In a small mixing bowl, combine 1 cup of gluten-free Bisquick mix with ¼ cup of sugar. Stir until well combined.
Add ½ cup of milk (you can substitute a dairy free alternative if you would like) to the Bisquick mixture. Stir until a smooth batter forms.
In a separate bowl, toss 4 cups of peeled and sliced fresh peaches with ¼ cup of sugar and ½ teaspoon of cinnamon until the peaches are coated in the mixture.
Pour the peach mixture into the greased baking dish, spreading the peaches evenly in the dish.
Pour the gluten free Bisquick batter over the peaches, covering them completely.
Dot the top of the cobbler with small pieces of butter (optional). Sprinkle the additional ½ teaspoon of cinnamon over the top of the Bisquick mixture.
Bake in the preheated oven for 30-35 minutes or until the crust is golden brown and the peaches are tender and bubbly. (30-35 minutes of cooking time if you are using fresh peaches. Canned peaches will cook for approximately 20-25 minutes and frozen peaches will cook for approximately 25-30 minutes).
Remove the cobbler from the oven and let it cool for a few minutes before slicing and serving.
Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream if desired.
