3cupsshredded cheese--cheddarmozzarella, or monterrey jack
115 ounce can black beans, drained and rinsed
115 ounce can diced tomatoes, undrained
Optional toppings: sliced jalapenossour cream, bacon bits, red onion, cilantro, corn, guacamole, salsa, avocado slices, chopped red bell pepper, chives
Instructions
Preheat the oven to 400°F (200°C). Arrange the chicken breasts in a baking dish and generously brush them with the BBQ sauce mixture. Bake for 20-25 minutes until thoroughly cooked. Once done, allow the chicken to cool slightly before using two forks to shred it into smaller pieces.
Spread a layer of tortilla chips evenly on a large platter or baking sheet. Add your preferred toppings such as black beans, corn, onions, and the prepared shredded BBQ chicken. Sprinkle an ample amount of both cheeses over the toppings.
Place the assembled nachos into the preheated oven and bake for 5-7 minutes, or until the cheeses melt and form a bubbly, golden layer.
Once out of the oven, enhance the nachos with your favorite garnishes. Fresh cilantro will add a burst of freshness, while jalapenos offer a spicy kick. Accompany your creation with sour cream, guacamole, and salsa for added flavor!
Notes
Nachos are best eaten fresh. For a dairy free, vegan and vegetarian version substitute dairy free cheese and swap the BBQ chicken for crumbled tofu, black beans, or even grilled vegetables like zucchini or bell peppers.
