Easy meals are a MUST in the summer! These barbeque chicken nachos are simple, easy and taste like summer!
I can't believe we are in the first week of summer already. It's been busy but so much fun!
Lunch dates with the kids are fun. I got to take each of them out this week. Some of them brought a friend a long which is always fun too. Of course the youngest wanted rice and beans:
Since she didn't get to bring a friend, she showed me the coupon for shoes she got in the mail and decided that she would like to go shoe shopping.
Newsflash: she didn't choose ANY of the shoes pictured here. She of course chose the first pair she tried on. I had to patiently wait while she tried the rest of the sandals in the store in her size on and then go back to the first pair. It's a girl thing!
Last weekend we went down to Las Vegas. My Mom needed some help down at her place so we jetted down for a quick trip to help her and spent the afternoon in Las Vegas.
We stopped at Seigfried and Roy's Secret Garden. Inside was a word brush artist Young Hee Kim. She made me an amazing "Welcome" sign for my office next year. So excited!!
Then it was on to see the city lights. From really, really, REALLY high up. I'm not sure why I'm more cautious in my thirties than I was in my 20's. We watched people jump out of the Stratosphere and that would've been SO cool in my 20's. In my 30's? I studied the ropes, the harnesses and exactly how I would bungee to the earth and my palms start to sweat just thinking about jumping. I am getting SO old. But it still looks cool and I am still thinking it would be a lot of fun to do.
Then it was back to my Mom's with the killer cat. He and I don't get along well. You can probably see why. The cat perches above me and looks like it wants to pounce on me and kill me. Then it hides and makes me jump a mile when it pops out of places.
Now I'm back home and ready for work next week. So excited to help some great students and see the students I worked with last summer and how much they've grown.
This week since it's back to work it will also be back to simple meals. These barbeque chicken nachos will be perfect for meals and also great for the NBA finals this week! Go Golden State Warriors!
Ingredients
- Tortilla chips
- Shredded mozarella cheese
- Chicken, cooked, shredded
- Barbeque Sauce (we used Stubb's)
- Black beans
- Chopped bacon bits
- Black beans
- Chives
- Sour Cream (optional)
Instructions
- Preheat oven to 350 degrees. Line a baking sheet with parchment paper.
- Arrange tortillas on the baking sheet for desired amount of servings.
- In a small bowl, stir together the chicken and barbeque sauce to taste. Sprinkle meat evenly over the chips. Sprinkle bacon and black beans evenly over the chicken. Sprinkle with cheese.
- Bake at 350 degrees for 10-15 minutes, or until cheese is melted.
- Remove from oven, top with chives and sour cream if desired.
