    Ingredients

    This recipe needs just 5 basic ingredients or less but you can add on to your BBQ chicken nachos recipe. You will need:

    • Tortilla chips
    • Shredded mozarella cheese
    • Chicken, cooked, shredded
    • Barbeque Sauce (we used Stubb's)
    • Black beans
    • Chopped bacon bits
    • Black beans
    • Chives or cilantro
    • Salsa
    • Guacamole
    • Sour Cream (optional)

    Instructions

    Step 1: Prep the BBQ Chicken: Preheat oven to 400°F (200°C). Place chicken breasts in a baking dish and brush with the BBQ sauce mixture. Bake for 20-25 minutes, or until cooked through. Let cool slightly, then shred the chicken with two forks.

    Step 2: Build the Nachos: Spread a layer of tortilla chips on a large platter or baking sheet. Top with desired toppings like black beans, corn, onion, and cooked BBQ chicken. Then sprinkle generously with both cheeses.

    • 1.5 pounds boneless skinless chicken breasts
    • ½ cup your favorite BBQ sauce sweet, smoky, or spicy, your choice!
    • 1 large bag tortilla chips 16 ounces tortilla chips
    • 3 cups shredded cheese--cheddar mozzarella, or monterrey jack
    • 1 15 ounce can black beans, drained and rinsed
    • 1 15 ounce can diced tomatoes, undrained
    • Optional toppings: sliced jalapenos sour cream, bacon bits, red onion, cilantro, corn, guacamole, salsa, avocado slices, chopped red bell pepper, chives

    Instructions
     

    • Preheat the oven to 400°F (200°C). Arrange the chicken breasts in a baking dish and generously brush them with the BBQ sauce mixture. Bake for 20-25 minutes until thoroughly cooked. Once done, allow the chicken to cool slightly before using two forks to shred it into smaller pieces.
    • Spread a layer of tortilla chips evenly on a large platter or baking sheet. Add your preferred toppings such as black beans, corn, onions, and the prepared shredded BBQ chicken. Sprinkle an ample amount of both cheeses over the toppings.
    • Place the assembled nachos into the preheated oven and bake for 5-7 minutes, or until the cheeses melt and form a bubbly, golden layer.
