Enjoy a simple and easy meal around the campfire or from the comfort of home. Delicious beef, vegetables, potatoes and seasoning come together in minutes!
Preheat oven to 350 degrees. Line a cooking sheet with tin foil. Set aside.
In a bowl, mix together the ground beef, egg, and ½ package of the onion soup. Mix with hands until thorughly combined. Form the meat into 4 balls. Place on baking sheet (NOTE: If you are using a high fat meat, you may want to take a second piece of tin foil and form a bowl inside the sheet pan to place them in while cooking so the fat stays in the piece of tin foil.
In a separate bowl, mix together the remaining onion soup mix and oil. Stir until combined. Toss the vegetables and potatoes in the mixture to coat, drizzling any of the remaining mixture over the potatoes and vegetables once on the baking sheet.
Arrange the potatoes on the baking sheet. Set the vegetables aside for now.
Place the meat and potatoes in the oven and bake for twenty minutes at 350 degrees. Remove the meat and potatoes from the oven and arrange the vegetables on the baking sheet. Cook an additional 20-25 minutes until potatoes and meat are cooked. (You may need to cover the meat with some tin foil the last few minutes of cooking time to avoid drying out the meat).
Serve with salt and pepper to taste.
Notes
Leftovers can be stored in an airtight container in the refrigerator for several days. Reheat.
