Tis' the season for this delicious gluten free Christmas Saltine Cracker toffee. This recipe is also known as gluten free Christmas crack. Layers of salty saltines are laid on a baking sheet, then a sweet toffee mixture is poured over the top of the saltines. To finish, melted chocolate is spread over the top of the toffee. It's a delicious and amazingly wonderful dessert. (Gluten Free option, dairy free option, soy free, egg free, nut free option, vegan, vegetarian, FODMAP friendly)
2cups milk chocolate or semi sweet chocolate chips
1cup chopped walnuts, pecans or pistachios (optional)
Instructions
Preheat oven to 400 degrees. Line a rimmed cookie sheet with aluminum foil. Lightly grease the aluminum foil. Arrange the saltine crackers in a single layer in the pan.
In a saucepan, heat the butter and brown sugar to medium heat. Bring to a boil, and once boiling cook for three minutes. Stir mixture frequently while cooking.
Once the mixture has boiled, pour the mixture evenly over the saltine crackers. Spread if needed.
Place the baking sheet in the oven and bake at 400 degrees for 5-6 minutes, or until bubbly.
Remove the toffee from the oven, melt the chocolate, then pour and spread the melted chocolate evenly over the top of the still warm toffee. Sprinkle nuts over the top if using.
Cool the toffee completely, then break apart into pieces and store.

It tastes wonderful chilled!FAST COOLING METHOD:To cool your toffee faster, once you have spread the chocolate chips on top (and nuts, optional) place in the refrigerator or freezer for several minutes until the toffee has cooled and chocolate has hardened (about 15-30 minutes for refrigerator and 10-15 minutes for freezer). Then go ahead and remove from the fridge or freezer and break apart the toffee to serve.
