Tis' the season for this delicious gluten free Christmas Saltine Cracker toffee. This recipe is also known as gluten free Christmas crack. Layers of salty saltines are laid on a baking sheet, then a sweet toffee mixture is poured over the top of the saltines. To finish, melted chocolate is spread over the top of the toffee. It's a delicious and amazingly wonderful dessert. (Gluten Free option, dairy free option, soy free, egg free, nut free option, vegan, vegetarian, FODMAP friendly)
Why was it named Gluten free Christmas crack?
A layer of lightly salted saltine crackers are placed on a baking sheet, then a layer of toffee is poured over the top of the crackers. The cracker and toffee mixture is then baked for several minutes to allow the toffee to get to that nice 'crack stage' then removed from the oven. While the toffee mixture is still warm, melted chocolate is spread evenly over the top of the toffee, then the mixture is cooled. Once cooled, the toffee is 'cracked' into pieces and served.

- Butter
- Brown sugar
- Saltines
- Chocolate chips
- Nuts (optional)
How to Make Gluten Free Christmas Saltine Cracker Toffee
First you will line a baking sheet with tin foil sprayed with cooking spray.
Then you will line your baking sheet with saltines (approximately 40)
Next you will boil the brown sugar and butter in a saucepan
After you will pour the mixture evenly onto the crackers.
Bake for 7-8 minutes in the oven until the mixture is bubbly.
Then you will remove the toffee from the oven and pour and spread melted chocolate evenly over the top of the mixture.
Sprinkle nuts on the top if you would like.
Allow the mixture to cool, then break into pieces.
What Substitutions Can I Make?
Dairy free: To make this recipe dairy free, just use dairy free butter.
You will also want to use dairy free chocolate chips.
Gluten Free: To make this recipe gluten free use gluten free saltine crackers.
Vegan/Vegetarian: Use dairy free butter and dairy free chocolate chips.
FODMAP friendly: Use gluten free saltine crackers, dairy free butter and dairy free chocolate chips.
Lower Sugar: You can substitute coconut sugar or low calorie brown sugar. It may alter the taste of the toffee a little.
Storing:
To store, place the toffee in an airtight container. It will store up to one week!
You can also store it in the refrigerator for up to two weeks. It tastes wonderful chilled!
Fast Cooling Method:
To cool your toffee faster, once you have spread the chocolate chips on top (and nuts, optional) place in the refrigerator or freezer for several minutes until the toffee has cooled and chocolate has hardened (about 15-30 minutes for refrigerator and 10-15 minutes for freezer).
Then go ahead and remove from the fridge or freezer and break apart the toffee to serve.

Ingredients
- 40 whole saltine crackers
- 1 cup unsalted butter
- 1 cup packed brown sugar
- 2 cups milk chocolate or semi sweet chocolate chips
- 1 cup chopped walnuts, pecans or pistachios (optional)
Instructions
- Preheat oven to 400 degrees. Line a rimmed cookie sheet with aluminum foil. Lightly grease the aluminum foil. Arrange the saltine crackers in a single layer in the pan.
- In a saucepan, heat the butter and brown sugar to medium heat. Bring to a boil, and once boiling cook for three minutes. Stir mixture frequently while cooking.
- Once the mixture has boiled, pour the mixture evenly over the saltine crackers. Spread if needed.
- Place the baking sheet in the oven and bake at 400 degrees for 5-6 minutes, or until bubbly.
- Remove the toffee from the oven, melt the chocolate, then pour and spread the melted chocolate evenly over the top of the still warm toffee. Sprinkle nuts over the top if using.
- Cool the toffee completely, then break apart into pieces and store.
