Gluten Free Winter BBQ Grilled Chicken and Vegetables

Just because it's winter that shouldn't stop you from firing up the grill! Today we've got a delicious recipe for winter grilling by making some simple chicken and vegetables with a savory BBQ spice rub. We then grilled some winter vegetables and added some pomegranate and feta on top to finish off the meal and give it some winter flair!
Preheat the Grill: Preheat your grill to medium-low to medium heat.
Season the Chicken: Rub the chicken with your preferred spice rub.
Grill the Chicken: Place the seasoned chicken on the grill. Cook for several minutes on one side, then flip and cook on the other side until the chicken is no longer pink in the center and reaches an internal temperature of 165°F (74°C).
Prepare the Vegetables: While the chicken is cooking, brush the vegetables with oil. Cook the vegetables in a grill pan or directly on the grill until they are tender, then remove from the heat.
Plate and Serve: Once the chicken and vegetables are cooked, arrange them on a plate. Sprinkle pomegranate arils and feta cheese on top. Serve and enjoy!
