For this recipe you will need:
- chicken breasts
- barbeque spice rub
- vegetables
- pomegranate arils
- feta cheese
Instructions
- Preheat grill to desired heat. (We do medium-low to medium). Rub chicken with the spice rub. Place chicken on grill and cook for several minutes on one side. Flip chicken and cook on the other side until chicken is no longer pink in the center and reaches an internal temperature of 165 degrees.
- While the chicken is cooking, cook the vegetables in a grill pan or straight on the grill. Cook until vegetables are tender, then remove. Brush vegetables with oil prior to grilling.
- Once chicken and vegetables are cooked, place them on a plate then sprinkle pomegranate arils and feta cheese on top.
Storing
You can store leftover food for up to 2 days in the refrigerator. Reheat to serve.
