sourdough bread

bacon bits

your choice: mozzarella, provolone, or cheddar

butter
softened, for grilling
Instructions
Spread 1 tablespoon of butter on one side of each slice of sourdough bread. This will be the outside for grilling
Place the unbuttered side of one bread slice facing up.
Layer with 1 slice of cheese, bacon bits, and another slice of cheese.
Butter the other side of the bread, then place buttered side out.
Heat a non-stick skillet or griddle over medium heat.
Place the sandwich in the skillet and cook for 3-4 minutes, pressing down gently with a spatula, until the bottom is golden brown and crispy.
Flip carefully and cook the other side for another 3-4 minutes until golden and the cheese is fully melted.
Serve
Remove from the skillet, let it cool for 1-2 minutes, then slice in half and enjoy!
