Fifteen hours in a car. Dinner time. And my seven year old is CRAVING beans and rice?? Cue a trip to Chipotle for Chipotle cilantro lime rice and beans. She loved it so much she has it all the time at home. With a side of alpacas for the win.
It was one of the longest trips to Los Angeles on record. We can usually make it from our home to Los Angeles in about ten hours. Five L-O-N-G hours of traffic put us into Los Angeles after dinner. It was dark, beef jerky was no longer holding anyone, the fights were starting and my six year old kept complaining about wanting beans and rice.
We kept passing places on the road we could all agree to except for the six year old. Every place mentioned was "no." Then a whiny "noooo." Then "NOOOOO!!!!" "I want beans and rice please!!!" Finally, the lit up Chipotle sign could be seen from the freeway. It was a shopping mall...inside was a Chipotle AND a Target. Sold.
Every since we came home she requests beans and rice. And this copycat Chipotle cilantro lime rice and beans works when she has a craving.
And play Alpaca World for the win. This game had the kids diving over each other to play and watch each other.
In other news, I decided to wreck my back after my last hike and run. I think I over did it but I reached over to grab something the day after my hike and my back went out. It's been a long recovery and the chiropractor I think is loving my stubborness. when he asked if I understood that I had done the equivalent of spraining my ankle to my back he said, "what do you do to ankle when you have a sprain?" I replied, "workout my arms and back...they still work." I'm a little bummed I'll be behind schedule for my usual half marathon ready start in May but hopefully I heal up soon and am back to normal. Thanks for all the well wishes.
Do you see the beautiful salad in this picture? My cute friend surprised me and the kids with dinner tonight. It was delicious! I made mine into a salad but i think you are supposed to make it some other way. It looked good, I was hungry. I went for the express dinner making version which was the salad. Her surprise dinner arrived at the same time the Chipotle cilantro lime rice was ready too. Win!
Ingredients
- 1 cup uncooked rice (basmati or long grain)
- 2 cups water
- 1 teaspoon salt
- Juice of ½ lime
- 2 tablespoon fresh chopped cilantro
Instructions
- Cook rice in rice cooker or on stovetop according to package directions.
- In a separate bowl, mix together the lime juice, cilantro and salt. Toss the mixture in the rice.
- Serve.
