    With the flu going around our family and the extra mild spring temperatures lately, it was time for some soup. I had a leftover ham bone that I've been wanting to use up, and everyone being sick was the perfect opportunity to use it up. Yes, I could've gone with chicken noodle, but this just sounded delicious and a welcome break from the bland toast I've eaten the past couple of days.

    Gather the Ingredients

    To make this comforting soup, you’ll need some simple ingredients, including diced ham, white beans, carrots, celery, onion, garlic cloves, potatoes, bay leaves and vegetable broth. For best results choose an organic or low-sodium broth for even more flavor. You can also add any additional spices you like for extra flavor such as black pepper and dried thyme.

    Cook the Ham and Onions

    In a large pot over medium heat, cook the diced ham and onion until the onion is translucent. Then add garlic cloves and stir for an additional 30 seconds before adding the white beans, carrots, celery, potatoes, bay leaves and vegetable broth. Bring to a boil then reduce heat to low-medium and simmer for 45 minutes or until vegetables are tender. Stir occasionally to ensure vegetables are cooked evenly. When finished, remove bay leaves before serving. Enjoy!

    Add the White Beans and Vegetables

    Once the onions are softened and lightly golden, stir in the garlic for about 30 seconds. Then add the white beans, carrots, celery, potatoes, bay leaves and vegetable broth. Bring the mixture to a boil then reduce heat to low-medium. Simmer on low-medium, stirring occasionally until all of the vegetables are tender. This will take around 45 minutes. When fully cooked remove bay leaves before serving!

    Let Cook for at least 45 Minutes

    After adding the vegetables and broth, bring the mixture to a boil, then reduce heat to low-medium and let it cook for at least 45 minutes. This will allow all of the vegetables to become tender and allow the flavors of each ingredient to really blend together. Make sure to remove bay leaves before serving! You can even cook it in the slow cooker for about 8 hours.

    Garnish with Parmesan Cheese and Parsley (optional)

    For added flavor and a bit of color, top each bowl of soup with freshly grated Parmesan cheese and parsley. If desired, you can also add croutons or crackers to the mix! This will give your soup an extra layer of crunchy deliciousness. Enjoy this timeless classic anytime during the colder months!

    Ingredients
      

    • 1 ham bone
    • 3 cups water
    • 3 cups low sodium chicken broth
    • 2 cloves of garlic minced
    • 1 cup diced yellow onion
    • 1 cup diced carrots
    • ¼ teaspoon ground black pepper
    • 2 teaspoons parsley fresh or dried is just fine
    • 2 teaspoons seasoned salt
    • ¼ teaspoon thyme
    • 1 cup corn frozen or fresh kernels are just fine
    • 1 cup frozen spinach chopped (optional)
    • 2 15 oz cans white beans drained and rinsed. (Apx 3-4 cups if using non canned)
    • 2 cans 14 oz diced tomatoes
    • 1 cup diced ham optional, but good if you want a little extra ham flavor

    Instructions
     

    • In a crockpot, add all ingredients, minus the ham bone. Stir to combine, then carefully drop in the ham bone. Set crockpot to low, cover and allow to cook for 8 hours. Shortly before serving, scrape the ham bone of all remaining meat and dice ham if needed. Return diced ham to crockpot, serve soup with rolls or a side salad.
