Blender Double Chocolate Ice Cream + Sunday Sewing

This blender double chocolate ice cream was the perfect ending to a busy weekend. This recipe is a no churn and is made in minutes!

This was a very busy weekend. The two older ones were off and away most of the weekend and the little one and I were home alone together. And she had plans for me!

On Friday we took out the four wheeler and went swimming. On Saturday my little girl had her birthday party celebration with friends (more on that coming soon!) and then we went to our city fair.

and we have been going around and around and around the neighborhood.

She also got lot’s of new toys but all day Sunday she worked on her sewing kit I bought her. I had mixed feelings about it. I thought she might not enjoy it or be able to do it, but she loves it and has spent time on and off today trying to complete it.

She now thinks she is an ‘expert’ sewer. And expert sewers require a snack. She wanted watermelon but must have missed the precut slices and opted for the entire watermelon . It was a little stressful for her to get the watermelon from flying across the room with her spoon.

Today I knew we needed some dessert and so I decided to make some homemade ice cream. I let the youngest choose the flavor and she came up with double chocolate.

This ice cream is made easily in the blender. It was fast and easy and the best blender double chocolate ice cream ever! I even enjoyed a rotten stomachache for several hours after trying a bite to make sure that it tasted all right.

Blender Double Chocolate Ice Cream + Sunday Sewing

Ingredients

  • 2 cups heavy whipping cream
  • 1 can sweetened condensed milk (we used homemade and used the recipe from Just a Pinch or our vegan version here on the website. Just search "vegan sweetened condensed milk")
  • 1/4-1/2 cup cocoa powder to taste
  • 1 cup chocolate chips

Instructions

  1. Place the heavy cream in a blender. Blend on high for 30 seconds to one minute. (If you don't have a blender you can also place the cream in a large mixer and whip for 3-4 minutes until the cream thickens and stiff peaks form).
  2. Stir in the sweetened condensed mik and cocoa (1/4 cup yields a nice chocolatey flavor and 1/2 gives more of a dark chocolate gelato style flavor)
  3. Blend for an additional 15-30 seconds or until smooth.
  4. Fold in the chocolate chips. Pour mixture into a bread pan and cover and freeze.
  5. Freeze for 6 hours or overnight. Serve.
