Peach Snickerdoodle Bars

These peach snickerdoodle bars are absolutely delicious and great for the end of the summer!

This weekend all the kiddos came home from camp which makes me happy! Some had fun at camp, others wish they could have stayed home. But overall it was a fun time.

My youngest also celebrated the fact that she did not have her big brother and sister around by making sure that I had all of her time and attention.

She brought me a list of things that she wanted to do.

  • Play with her friends
  • Go craft shopping
  • Do crafts
  • Cuddle and watch movies
  • Sleepover in the living room
  • Go get rice and beans at Taco Time

It was a pretty good list. And we were able to get everything on her list accomplished. The problem was she wore me out. So we all ended up crashing after getting home from our camps. It was a great lazy day.

And then Sunday came along and I was ready for some good dessert. I was craving something with peaches. I made this kit for the kids and decided I would make a gluten free version for me.  you can make this version with gluten free flour or regular.

With only a few weeks of summer left it’s time to enjoy a little treat for yourself! Might I suggest running to your room with the plate and turning on Netflix.

Peach Snickerdoodle Bars


  • 1 cup butter, softened
  • 1 1/2 cups sugar
  • 2 eggs
  • 2 tsp vanilla extract
  • 2 3/4 cups all-purpose or gluten free flour
  • 1 1/2 tsp cream of tartar
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 peach, diced and pitted
  • 3 tbsp white sugar
  • 2 tsp ground cinnamon


  1. preheat oven to 350 degrees. lightly grease a 9x13 pan and set aside.
  2. In a mixing bowl, cream together the butter and sugar until light and fluffy (2-3 minutes). Add in the eggs and vanilla, stirring just until incorporated. Add in the flour, cream of tartar, baking soda and salt, stirring until combined. Fold in the peaches.
  3. Press the dough evenly into the pan.
  4. In a small bowl mix together the sugar and cinnamon. Sprinkle evenly over the mixture.
  5. Bake at 350 degrees for 23-28 minutes. Remove from oven and allow to cool completely before cutting into squares.
