    What are Lazy Cakes?

Lazy cakes, also known as no-bake cakes, are a popular choice for those who want to enjoy a delicious dessert without the hassle of baking. These cakes are typically made by combining a few simple ingredients and allowing them to set in the refrigerator or freezer. The result is a rich and decadent treat that requires minimal effort but delivers maximum flavor.

Ingredients for Gluten Free Lazy Cake

I love this cake because it's so easy and only needs a few ingredients!

    • 6 oz (180g) gluten free biscuits or graham crackers
    • ½ cup (100 g or 1 stick) butter, melted
    • 6 tablespoon cocoa power
    • ½ of a 14oz can sweetened condensed milk

    Instructions for Making Cake

    • Break the biscuits into large chunks and set aside. Line a loaf pan with parchment paper or lightly grease a bundt pan.
    • In a large bowl, mix together the melted butter, cocoa powder and condensed milk until smooth and combined. Add the biscuit pieces and fold to combine.
    • Place the biscuit and chocolate mixture into the prepared loaf pan and freeze for 2-3 hours until set. Or, place the mixture on a sheet of foil and squeeze into a log/cylindrical shape and freeze.
    • Once the cake is firm, slice the cake. Store any extra slices in the freezer, thaw and enjoy anytime!

Variations and additions to the lazy cake recipe

While the ultimate gluten-free lazy cake recipe is already delicious on its own, you can customize it to suit your taste preferences. Here are a few variations and additions you can try:

    • Peanut Butter Chocolate Lazy Cake: Add ½ cup of creamy peanut butter to the cookie mixture for a peanut butter-chocolate twist.

    • Garnish the cake with fresh berries, mint leaves, or edible flowers for a pop of color and freshness.

What type of cookies or biscuits can I use for lazy cake?

Lazy cake recipes often use cookies or biscuits that are sturdy and hold their shape when soaked. Popular choices include tea biscuits, graham crackers, digestive biscuits, ladyfingers, or chocolate wafer cookies. You can try this cake out with different gluten free crackers to see which ones are your favorites!

How long does it take for a lazy cake to set?

It iwill take a few hours for your take to set and freeze. For softer biscuits, you can refrigerate the cake overnight then freeze for a couple of hours to set the cake in the mold.

Can I make a lazy cake without dairy or gluten?

Yes, you can adapt lazy cake recipes to be dairy-free or gluten-free. For dairy-free options, you can use non-dairy sweetened condensed milk and butter. To make the recipe gluten-free, choose gluten-free cookies or biscuits that are suitable for your dietary needs.

How long can a lazy cake be stored?

Lazy cakes can typically be stored in the refrigerator for 3-4 days. You can freeze it for up to a week. However, the texture and taste may change over time, so it's best to consume it within a couple of days for the freshest experience. Cover the cake tightly with plastic wrap or store it in an airtight container to maintain its freshness.

    No Bake Recipes

Summer is my favorite time to enjoy no bake recipes but they are perfect anytime! One of my favorites are apricot coconut no bake cookies or some peanut butter white chocolate bakes. For a more elegant looking dessert you can try these gorgeous no bake cheesecakes.
