    The Perfect Summer Salad Includes Pears

    Summer is definitely starting out with a bang at our house. Soccer camps and dance camps mixed with friends, visits to the pool and family coming to visit. It's officially summer time and I am loving it!

    Summer is my favorite season. I love being able to head outside anytime I want and not get blasted by freezing cold air and wind. I love that you can take a bike ride, go for a run or head out for a walk or swim. There are so many things to choose from

    This grilled salad has the perfect combinations in it. A sweet pear honey vinaigrette with hazelnuts, dried cranberries, grilled pears and a helping of feta cheese. It is delicious! To make it a meal, you can add some cut up chicken breasts or grilled tofu brushed with some of the vinaigrette.

    Prepping

    The key ingredient in this recipe is the pears. They should be ripe and juicy, and are best when they are in season.     Equipment

    Ingredients
      

    • 2 cups spinach or mixed greens rinsed and chopped
    • 1 15 oz can organic pear halves in pear juice not in syrup
    • 1 teaspoon olive oil
    • 1 teaspoon honey
    • 1 teaspoon pear juice
    • 2 teaspoon vinaigrette I used balsamic
    • ⅛ cup chopped hazelnuts toasted
    • ⅛ cup dried cranberries
    • 1 /8 cup feta cheese optional

    Instructions
     

    • in a salad bowl, place spinach or mixed greens. Set aside.
    • In a small bowl, mix together the honey, pear juice, and vinigarette. Mix until well blended, then set aside.
    • Brush 3-4 pear halves with olive oil, then grill on medium turning the pears from front to back every minute until browned nicely. In a pan on the stove, add remaining oil and hazelnuts. Cook over medium heat until nuts brown. (You can also place the nuts on a cookie sheet in a 400 degree oven for several minutes until they brown).
    • To assemble salad: Place pear halves on the bed of lettuce, top with feta cheese, cranberries and hazelnuts. Drizzle with vinaigrette.
    • To make it a meal: Serve with cut up chicken breast, seitan, or grilled tofu.
