You can put anything you like between two slices of bread, and voila! You have a delicious meal ready in minutes. One sandwich that stands out from the rest is the pesto provolone turkey sandwich.
This recipe was my daughters favorite her sophomore year of college. Her roommate had a panini press and taught her how to make it. It was a simple and easy meal to include along with her college cookbook recipes.
Don't forget the pesto!
Pesto is a classic Italian sauce made from basil leaves, pine nuts, garlic, Parmesan cheese, and olive oil. The sauce is delicious and versatile and can be used in a variety of dishes, including sandwiches. Provolone is a semi-hard cheese that originates from Southern Italy. The cheese is creamy, slightly smoky, and has a unique flavor that pairs perfectly with turkey.
Let's talk about bread
My daughter swears by ciabatta bread for this recipe and you can use gluten free ciabatta rolls too. Another great option to use in this recipe is sourdough bread.
Ingredients
For this recipe you will need 2 slices of sourdough bread or 1 ciabatta roll. You will also need 1-2 tablespoons of pesto sauce, 4 slices of turkey, 1-2 slices of provolone cheese and some salt and pepper to taste. You can optionally add some mayonaise or a handful of argula.
Preparing your sandwich
To prepare your sandwich, spread the pesto sauce on one side of the bread or roll. You can use store-bought pesto or make your own. To make your own pesto, blend fresh basil, pine nuts, garlic, Parmesan cheese, and olive oil in a food processor until smooth.
Add the slices of provolone cheese on top of the pesto. The cheese should cover the entire slice of bread.
Place the turkey slices on top of the cheese. You can use leftover turkey or use sliced turkey from your local deli.
Place your sandwich in a panini press lightly brushed with oil first, or heat your grill or stovetop pan to medium heat. Place the sandwich in the pan or press and cook. For the grill or stovetop method, press the sandwich down inside the pan, (I usually use a lid to press down on the sandwich), then cook for a couple of minutes. Flip the sandwich and cook on the other side. Remove from the grill, press or stove and serve once bread is crispy and cheese begins to melt.

- You can add other toppings to the sandwich, such as sliced tomatoes, avocado, or red onion.
- You can use different types of bread, such as focaccia.
- If you don't like arugula, you can use lettuce or spinach instead.
