    Set it and Forget It

While not technically a thirty minute meal, I feel like slow cooker meals are really nice to have on a meal rotation.

In college and when I was working full time before kids I loved them because I could set all the meat I wanted in the slow cooker then freeze the leftovers for quick and easy meals.

Now after having a family I love it because it takes minutes of my time to prep the day of or night before and dinner is ready when I get home from work.

It’s also soooo much healthier to prep your own meat! The frozen diced chicken breasts often contain a lot of sodium!

    Ingredients

Let’s get started! You will need:

    • Chicken breasts
    • A packet of ranch dressing
    • A packet of taco seasoning
    • Water
    • Tortillas–corn or flour

Then the fun part! Let’s add your choice of different toppings! Sometimes I go big with lot’s of toppings and sometimes I just add a little bit of cheese and lettuce and call it good! Here are some ideas:

    • Lettuce
    • Diced tomatoes
    • Diced avocado
    • Ranch dressing
    • Cheese
    • Cilantro
    • Sour cream
    • Cole slaw

    30 Minute Version

    • For an easy stovetop version, heat a pan on medium low heat on the stove. Cut the chicken breasts into small bite sized pieces. Add one tablespoon of oil to the pan, then add the diced chicken.
