    These crock pot chicken ranch tacos are a nice and easy meal! Place your chicken breasts, taco seasoning, ranch dressing seasoning in a slow cooker before heading out to work then set it and forget it! One of the simplest and easiest meals you can make with minimal ingredients that will be ready for you when you walk in the door from work!

    Set it and Forget It

    Crock pot meals like these crock pot chicken ranch tacos are really nice to have on a meal rotation. 

    In college and when I was working full time before kids I loved them because I could set all the meat I wanted in the slow cooker then freeze the leftovers for quick and easy meals. 

    Now after having a family I love it because it takes minutes of my time to prep the day of or night before and dinner is ready when I get home from work. 

    It’s also soooo much healthier to prep your own meat!

    Ingredients

    Let’s get started! You will need: 

    • Chicken breasts
    • A packet of ranch dressing 
    • A packet of taco seasoning
    • Water
    • Tortillas–corn or flour

    Then the fun part! Let’s add your choice of different toppings! Sometimes I go big with lot’s of toppings and sometimes I just add a little bit of cheese and lettuce and call it good! Here are some ideas:

    • Lettuce
    • Diced tomatoes
    • Diced avocado
    • Ranch dressing
    • Cheese
    • Cilantro
    • Sour cream
    • Cole slaw
    • Rice

    Instructions

    Place the chicken, ranch seasoning, taco seasoning and water in a slow cooker. Cook the chicken on low for 6-8 hours or on high for 3-4 hours. Ensure the internal temperature of the chicken reaches at least 165°F (74°C). Shred the chicken and serve.

    Substitutions

    • FODMAP Friendly: Do you have stomach issues and the thought of having tacos make your stomach churn? Don’t worry! There is a simple way to make these chicken ranch tacos FODMAP friendly!  Taco Seasoning: use a FODMAP friendly taco seasoning (about 2 tablespoons=1 packet of taco seasoning) Ranch dressing packet: You will need to use a dairy free ranch dressing packet. We found one on the market that you can easily buy below! (contains affiliate links) Tortillas: Use corn tortillas or gluten free flour tortillas
    • Gluten Free: You need just a couple of substitutions to make these tacos gluten free! Taco Seasoning: Be sure to buy gluten free taco seasoning! Tortillas: Use corn tortillas or gluten free flour tortillas
    • Dairy Free: To go dairy free you just need to change one thing! Ranch dressing packet: Use a dairy free ranch dressing packet. I listed one on the market that you can easily buy below! (contains affiliate links)

    Equipment

    For this recipe you will need a crock pot. If needed you can use a crock pot liner.

    Storing

    The meat can be stored in an airtight container in the refrigerator for several days. You can also freeze the meat for several months then thaw and reheat when ready to serve.

    Equipment

    Ingredients
      

    • 4 whole boneless, skinless chicken breasts
    • ½ cup water
    • 1 packet (2 tablespoons) taco seasoning
    • 1 packet (2 tablespoons) ranch seasoning mix
    • 12 corn or flour tortillas

    Instructions
     

    Classic Version:

    • Add the chicken, taco seasoning, water, and ranch seasoning packet in a slow cooker. Cook on high heat for 4-5 hours or low heat for 6-8 hours. Remove from slow cooker and shred and mix chicken prior to cooking.

    30 Minute Version

    • For an easy stovetop version, heat a pan on medium low heat on the stove. Cut the chicken breasts into small bite sized pieces. Add one tablespoon of oil to the pan, then add the diced chicken. Cook until almost brown on the outside and cooked on the inside. Add 1 cup water,  taco seasoning and ranch dressing packet, stirring to combine. Cook until water has evaporated and mix is evenly coating the chicken. Serve.

    LEFTOVERS
    Place any leftovers in an airtight container in the refrigerator for several days or place in freezer in an airtight container up to one month. Reheat.
