    Ingredients

    • ground beef
    • diced tomatoes
    • fresh or frozen green beans or bell peppers
    • uncooked brown rice
    • uncooked quinoa
    • minced onion
    • sugar
    • salt
    • Worcestershire sauce

    • Mexican blend cheese

    Instructions

    1. In a large pan, cook the ground beef or buffalo on medium heat until no longer pink. Drain the meat, then return to the pan and stir in the remaining ingredients.
    2. Allow the mixture to come to a boil, then reduce the heat to medium low, cover and let cook for 30-40 minutes or until the rice and quinoa are cooked and tender.
    3. Top with mexican blend cheese or reduced fat cheddar cheese if desired.

    • 1 teaspoon salt
    • 1 teaspoon Worcestershire sauce
    • ½ teaspoon ground mustard
    • ½ teaspoon garlic powder
    • ¼ teaspoon ground pepper
    • ¼ teaspoon hot pepper sauce
    • Mexican blend cheese or reduced fat cheddar cheese for topping

    Instructions
