Peeps Marshmallow Chocolate Chip Cookies

St. Patrick’s Day is over and it’s time to officially welcome Easter! Today I’m bringing you a spin on favorite Easter treats.  We’re making Peeps Marshmallow Chocolate Chip Cookies! I can say that Peeps were one treat I also never had until I went away to college. I think that college was a very eye opening experience for me food wise. Ramen, Twinkies, Peeps–all the budget approved food a college kid could afford.

We are excited to bring these festive Easter treats to you today! They’re like chocolate chip cookies meet marshmallow cookies. They are definetely kid approved and are a perfect treat to munch on while decorating Easter eggs. And if Santa had to sub for the Easter bunny, he would definetely put his stamp of approval on these cookies. Which means you should try these cookies. Stat!

Peeps Marshmallow Chocolate Chip Cookies

Prep Time: 15 minutes

Cook Time: 20 minutes

Yield: 12 cookies

Peeps Marshmallow Chocolate Chip Cookies

These chocolate chip cookies have a little surprise--a yummy Peeps bunny hidden inside!


  • 2 1/4 cups unbleached all purpose flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 cup butter (2 sticks)
  • 3/4 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 1 tsp vanilla
  • 2 whole eggs
  • 2 cups semi sweet chocolate chips
  • 12 whole Peeps bunnies (do not use chicks)


  1. In a mixing bowl, place the butters and sugar. Cream the butter on medium speed for approximately three minutes, or until mixture becomes light and fluffy. Stop the mixer and stir in the eggs and vanilla. Set mixer to low speed and mix until blended. Scrape the bowl if necessary.
  2. In a bowl, combine the flour, baking soda and salt. Stir to combine, then set aside.
  3. With the mixer on low, slowly add in the flour mixture. Continue mixing until all flour has been blended well. Stop, fold in the chocolate chips.
  4. Taking a golf ball sized amount of dough, wrap it around one of the Peeps bunnies completely. Make sure that none of the Peep is showing before placing it on the cookie sheet.
  5. Place cookies six on a sheet and fairly far apart as cookies will spread. Bake at 350 degrees for 18-20 minutes or until lightly browned. Remove from oven and allow to cool for several minutes before moving to a cooling rack to finish cooling completely.
