    Gluten Free S'Mores Spring Rolls with Optional Peeps Marshmallows

    Hear that snap when you break into a gooey peeps s’mores roll filled with marshmallow, chocolate and crushed graham crackers. Glam them up for Easter parties with a drizzle of chocolate on top! Made with minimal ingredients (just five!) and ready in under thirty minutes! (GF, DF option, soy free, nut free, vegan, vegetarian, FODMAP option).

    Are Spring Rolls Gluten Free?

    There are rice spring rolls available that are gluten free. They are the type that we used in today’s recipe. 

    How to Prepare Spring Rolls For Filling

    We usually soak each spring roll for about 15-20 seconds in water then place it on top of a wet paper towel, a cutting board or countertop. We usually fill a pie dish or plate with water. Don’t stress, the spring roll wrapper will still fill a little firm but will soften as it sits. We fill the spring roll up with fillings and then wrap it all up! The spring roll wrappers will get sticky so make sure to not have them touch each other! 

    Note: Do NOT use a wooden sushi roller to ‘roll’ up the rolls. Bad idea, personal experience. 

    Preparing Spring Rolls

    I highly suggest having all of your prep work done before hand. We suggest having all your filling ingredients ready to go prior to soaking the spring roll wrappers. 

    To fill the spring rolls: Place ¼-⅓ cup of filling in the middle of the spring roll, leaving space around the sides. Fold the sides inward then roll up the roll other edges and seal any seams. 

    Cooking Rice Spring Rolls

    There are several ways to cook rice spring rolls for this recipe. Since it’s dessert and there is marshmallow involved that expands, the spring rolls cooking time may need to be adjusted down. 

    • No cook. You can serve your spring rolls right away if you would like without cooking. (But we do suggest using one of the methods below since s’mores need to be gooey!)
    • Frying: Place oil in a pan and heat to approximately 375 degrees. Place one roll in the oil and allow the roll to brown (about 3-5 seconds). Flip the roll and brown the other side (3-5 seconds). Remove and allow to drain on paper towels. 
    • Oven: Preheat oven to 350 degrees. Line a baking sheet with parchment paper or lightly greased tin foil. Arrange the spring rolls on the pan, not touching each other. Bake at 350 degrees for 14-20 minutes, flipping half way through baking time. Spring rolls are done when nicely browned on each side and filling has melted. **Favorite baking method for cooked spring rolls
    • Air Fryer: Brush each spring roll lightly with oil and lightly grease the inside of your air fryer. Cook rolls for approximately 3-5 minutes, turning and flipping them over and cooking for an additional 3-5 minutes more until browned and filling has melted. 

    My Spring Rolls Dried Out! 

     It happens sometimes! But the good thing is you can bring them back to their pliable shape. Just dip the rolls quickly in water and then wipe off the excess. Cover them with a wet paper towl for 1-3 minutes until they soften again. Eat and enjoy or continue with one of the above cooking methods. 

    Help! My Marshmallows Exploded!

    Although extremely rare, this usually happens when not enough room is given inside the spring roll wrapper to allow for expansion. Or the spring roll wrappers were starting to dry out prior to baking and they split during frying or baking. 

    Items You Need to Make S’Mores Spring Rolls:

    • Rice spring roll paper
    • Marshmallows
    • Graham crackers
    • Chocolate 

    Can You Store Premade S’Mores Spring Rolls?

    In short, yes you can fill the s’mores spring rolls and then store them. We suggest wrapping them in plastic wrap and placing them in the fridge so they stay pliable. We recommend if using Peeps or colored marshmallows to prepare and then cook the spring rolls immediately as the colors can bleed. Premade spring rolls can be stored in the refrigerator for up to two days.

     It happens sometimes! But the good thing is you can bring them back to their pliable shape. Just dip the rolls quickly in water and then wipe off the excess.     Ingredients
      

    • spring rolls
    • crushed graham crackers
    • chocolate squares or chips can subsitute dairy free
    • marshmallows jumbo or peeps
    • bunny grahams or melted chocolate for garnish

    Instructions
     

    • Follow instructions in notes for preparing spring rolls. In each spring roll place a marshmallow, chocolate and graham cracker crumbs. Roll up and set aside for cooking. Keep spring roll moist until you cook the spring rolls. Serve cooked spring rolls while warm. See instructions below for cooking.
