There are several recipes that just scream comfort food in our family. This recipe was one that I was given back when I first got married. My mother in law made it for me and now it’s one of our families signature dishes.

My Signature Dish–Chicken Parmesan Casserole

Ingredients

  • 13 oz uncooked noodles (fettucine recommended--can substitute gluten free if needed)
  • 1/2 cup butter
  • 1/2 cup flour (subsitute cornstarch or arrowroot flour for gluten free)
  • 1 tsp salt
  • 1 tsp pepper
  • 2 cups chicken broth
  • 2 cup whipping cream (non whipped)
  • 3-4 cups cooked chicken breasts, cut into bite sized pieces
  • 1 cup shredded parmesan cheese

Instructions

  1. Cook noodles according to package directions. Drain and set aside.
  2. In a large saucepan, melt the butter. Whisk in the flour and seasonings. Cook over low heat stirring constantly until the mixture becomes smooth and bubbly.
  3. Remove fromheat. Stir in broth and cream. Return to heat, turn heat up to medium and continue stirring constantly until mixture comes to a boil. Boil for one minute. Turn heat off, stir in chicken and noodles
  4. Pour the mixture into a lightly greased 9x13 or 11x14 inch pan. Sprinkle parmesan cheese evenly over the top of the casserole.
  5. Bake casserole at 350 degrees for approximately 25-30 minutes, or until the center is bubbly and cheese on the top is lightly browned.

Notes

This recipe can easily be halved for smaller families if needed. For a lighter version you can use 1 cup whipping cream and 1 cup milk.
