Gluten Free Chocolate Pecan Pie with Gluten Free Graham Cracker Crust

Delicious gluten free chocolate pecan pie is so good and tastes absolutely amazing at holiday parties!

Several years ago my then mother in law served the most amazing pie at one of our holiday parties. It was so good! Unfortunately shortly after that I fell sick and couldn’t have it anymore.

But then I found a way to make it gluten free and dairy free and still taste amazing. And for those who have long followed this blog, you know I’m not a huge fan of pie crust. So I opted for a gluten free graham cracker crust.

Are you ready for Christmas yet?

I’m actually ready! My last (and hardest) final is over tomorrow night. In the meantime we’ve had lot’s of other projects going on.

Just this weekend my daughter had her birthday party at my house. They decided to have a karaoke party. It’s always fun when you have a group of choir and drama students singing in your living room. I was downstairs and the music sounded gorgeous, especially when they started to sing harmony together in songs. I can’t believe we were able to pull this party together in thirty minutes.

After that, it was off to dinner at Soy’s Sushi Bar and Grill. It was the best sushi in Utah. Now I can tell my family and friends when they visit me that we can actually enjoy good sushi! I love how the restaurant has done a great job of combining fusion and traditional sushi. We even loved how dinner was served on a hot stone. After dinner it was time to do some Christmas shopping as light snow fell (perfect for getting you into the Christmas spirit) and then I tried to watch the new episode of Vikings but ended up asleep.

The next night the kids came home from a weekend at their Dad’s and my daughter told me that she needed cookies made for her Spanish class the next day. I often have to remind myself that I will miss all of her last minute things she tells me about when she leaves for college in a couple of years.

We made our hot cocoa cookies.

The elf got a little hungry and decided he couldn’t wait to sample the cookies. They were elf approved!

We also made our list of the gifts going to our neighbors. This year with finals and so much on my list we decided to make two different recipes:

But for now, I’ll finish typing my paper and hope that I can wait until Christmas to enjoy a slice of this gluten free chocolate pecan pie!

Gluten Free Chocolate Pecan Pie with Gluten Free Graham Cracker Crust

Ingredients

    For the Crust:
  • 1 1/2 cups graham cracker crumbs (we used Kinnikinick gluten free graham crackers)
  • 1/3 cup sugar
  • 6 tbsp butter, melted (we used Earth Balance)
  • For the Pie Filling:
  • 3 eggs
  • 1 cup coconut sugar (can substitute other natural sugar)
  • 2 tbsp butter, melted (we used Earth Balance)
  • 1 1/2 cups chocolate chips (we used Enjoy Life)
  • 2 cups pecans

Instructions

    To Make the Crust:
  1. Preheat oven to 375 degrees. In a bowl, mix together the graham crackers, sugar and butter until combined. Press into the 9 inch pie shell. Bake at 375 degrees for 7 minutes. Remove from oven and allow to cool before filling.
  2. To Make the Pie Filling:
  3. Sprinkle the chocolate chips evenly over the bottom of the pie crust.
  4. Reduce heat in oven to 350 degrees. In a food processor or blender, mix together the eggs, sugar and butter.
  5. Fold in the pecans by hand. Pour the mixture evenly into the pie crust.
  6. Bake at 350 degrees for 40-50 minutes or until the pie is set.
  7. Remove from oven, allow the pie to cool completely before serving.

Notes

This pie can be made and frozen. Wrap in plastic wrap and heavy duty freezer foil before freezing. To thaw, remove pie from oven and allow to thaw in refrigerator or at room temperature. Bake at 350 degrees for 5-10 minutes prior to eating. You can substitute coconut oil for the butter.
